Buttery and chewy, these blondies turn a summertime favorite into one magical baked dessert. Tahini, a paste made from ground sesame seeds, comes through in this blondies recipe offering an air of nuttiness while also giving off halva vibes as it mingles with the sweetness of the batter. As it bakes, the edges crisp up while the center stays soft and tender. And don’t fret, the stars of a satisfying campsite s’more are all present—graham cracker crumbs make up part of the mix, chunks of bittersweet chocolate are studded throughout, and a gooey marshmallow topping browns under the heat of the broiler or a kitchen torch. 

Spray scissors lightly with cooking spray to cut the marshmallows in half crosswise for the topping. For super smooth squares, slice with a lightly greased chef’s knife and wipe the blade between each cut.

Ingredients

  • cooking spray

  • 1 1/4 cups all purpose flour

  • 1 cup coarse graham cracker crumbs

  • 1 tsp baking powder

  • 1 tsp kosher salt

  • 2 large eggs

  • 1 1/2 cups packed light brown sugar

  • 3/4 cup stirred tahini

  • 1/2 cup (1 stick) unsalted butter

  • 1 tsp pure vanilla extract

  • 4 oz 60% bittersweet chocolate, chopped

  • 21 large marshmallows, halved crosswise

Directions

  1. Preheat oven to 350°F. Coat an 8-inch square baking dish with cooking spray. Line with aluminum foil, leaving 2 inches of overhang on all sides. Coat foil with cooking spray.

  2. Stir together flour, graham cracker crumbs, baking powder, and salt in a large bowl. Whisk eggs, sugar, tahini, butter, and vanilla in a medium bowl until smooth. Add egg mixture to flour mixture, stirring until just combined (batter will be thick). Fold in chocolate. Spread batter evenly in prepared baking dish.

  3. Bake until edges are browned and start to pull away from sides of dish and a toothpick inserted in center comes out clean, 25 to 27 minutes. Remove from oven and top with marshmallows, cut side down.

  4. Preheat broiler with oven rack about 8 inches from heat. Broil until marshmallows are golden brown, 2 to 3 minutes, rotating pan every 30 seconds for even browning. Let cool completely in pan on a wire rack before slicing, about 2 hours.
