In Korea, Doenjang is a traditional fermented bean paste that is full of savory, umami-rich flavors. It is similar to a thicker, chunkier version of miso, but with a much deeper and stronger character. Since it is a paste, Doenjangs thick texture should be thinned with oil, stock or water to make a sauce or marinade. Traditionally, Doenjang is used for making dipping sauces for vegetables, or as a base for soups and stews.
