These homemade St. Patrick’s Day cupcakes (spiked with Guinness!) are sure to make your holiday.

St. Patrick’s Day is a once-a-year excuse to guzzle green beer, munch on party snacks, and try your hand at festive St. Patrick's Day desserts such as a green velvet cupcakes recipe—or, in our case, cupcakes spiked with Guinness. The nibbles should be easy to whip up, since they are sure to be devoured just as quickly. That’s why out of all the St. Patrick’s Day cupcake ideas, our recipe is embarrassingly simple: replace the water in a box of cake mix with Guinness (or other stout beer). Plus, the boozy dessert appeals to adults (and the food coloring-averse) more-so than light green cupcakes or green icing cupcakes. Though you can top these with fancy St. Patrick's Day cupcake toppers, we find it easiest (and most delicious) to finish them with a 3-ingredient Guinness ganache and a flurry of sprinkles.

Here's how it all went down. When tasked with developing new St. Patrick’s Day recipes, I originally set out to turn our decadent Chocolate Stout Cake into festive St. Patrick’s Day cupcakes. But when I opened the pantry to do a quick ingredient check, a box of Devil’s Food Cake mix stared back at me. Immediately, I had a thought: could I replace the 1 cup of water added to the boxed mix with 1 cup of Guinness? It was definitely worth trying.

The hack didn't just work, it passed with flying colors (a rainbow, you could say). Fluffy, light-as-air cupcakes with a bold chocolate flavor made more pronounced by the addition of beer. Basically, these beauties aren't messing around. They are for true chocoholics.

For an even boozier treat, finish your St. Patrick's Day cupcakes with a Guinness ganache (you can find the recipe here) and top with green and gold sprinkles. You’ll find it easiest to pour the ganache into a small bowl and dip the cupcakes top-down into the it. Work quickly to add the sprinkles before the ganache hardens.

No one has to know how easy these are to make, so if you do go a more traditional route with your St. Patrick's Day feast, they'd be just as at home as part of a fancier spread.
