Peaches fall into two basic categories: clingstone and freestone. The fruit of a clingstone peach clings to the pit, making it difficult to slice or chop neatly. The fruit of a freestone peach pulls cleanly from the pit and is perfect for recipes for which presentation is important, as with Warm Peaches With Whipped Cream or the Peach and Sour Cream Tart.
