You’re probably used to eating radishes raw in salads, or maybe even served with butter and flaky salt as a classic snack. But it may surprise you that radishes can also be cooked. When braised or roasted, radishes trade their familiar peppery bite for a mellow and juicy flavor profile that's hard to resist.

The best radishes to roast are Cherry Bell, the kind most commonly found at the supermarket. Easter Egg radishes roast well too, and come in gorgeous hues of pastels to brighten up your table. French Breakfast radishes, the mildest, are elongated and go from a pinkish red to white tips.

If you want a simple go-to side dish, simply drizzled your radishes with olive oil, season them with salt and pepper, and roast them in the oven until they're tender when pierced with a fork (about 15 minutes).
