You're not alone. The trend of processing cauliflower into rice-sized pieces isn't going anywhere, and you can find it in everything from mock risottos to hearty casseroles. The only downside of cauliflower rice is that you have to drag out the food processor and take the time to break down the veggie. There's a reason Trader Joe's cauliflower version of a popular Asian-inspired specialty continues to be so popular it often sells out. Convenient? Absolutely. Delicious? Of course! Trader Joe's new Riced Cauliflower Stir Fry is a staple in the store's freezer lineup. The cauliflower rice is seasoned with tamari (gluten-free soy sauce) and sesame oil, then mixed with green peas, red bell peppers, grilled corn, and spring onions. The result is a flavorful, umami-rich dish that tastes homemade and bursts with color. Each 1-cup serving contains just 50 calories, two grams of fat, and seven grams of carbs. Needless to say, it is a much healthier option than take-out. To prepare the rice, you'll heat olive oil in a large skillet, add the stir-fry, and cook until warmed through, about six minutes. If you're serving it as an entrée, top it with protein, such as a fried egg and sliced avocado, tofu, chicken, or shrimp. Or, leave it as-is and serve as a side. The rice is available in a 16-oz. bag for $3.79. Prefer to make your own? You've still come to the right place. Consider these three genius ways to transform cauliflower rice: a flatbread, some cheesy tots, and "risotto" with beets. Was this page helpful? Thanks for your feedback! Tell us why! Other Submit
