Cut and fried the right way, salty, slightly tangy halloumi cheese from Cyprus makes the best damn cheese fries you've ever had. The cheese is typically grilled or pan-fried because it gets golden and crisp without melting into a big mess. Instead, halloumi cheese softens ever so slightly. Don’t be intimidated by the frying part: it's easy.
Traditionally made from a mixture of goat and sheep’s milk, halloumi cheese has some similarities to mozzarella or feta. It’s brined which gives it that recognizable and irresistible salty snap. When dusted in a mixture of flour and cornstarch before dipping in a hot pan, it becomes crispy finger-food, just like fries.
Cut 8 oz. halloumi cheese, into 1/2-inch thick sticks. In a large bowl, whisk 2 tablespoons each all-purpose flour and cornstarch. Add halloumi and toss to coat. Heat a combination of 2 tablespoons each olive oil and vegetable oil (or another neutral oil) in a large skillet. Add halloumi and cook, turning often, until golden brown all over, 3 to 4 minutes, adjusting the heat between medium and medium-high if the pan is getting too hot. Transfer to a paper towel-lined plate. Serve these warm.
A yogurt sauce with a kick is great for dipping these crispy fries. Just mix 1/4 cup plain yogurt with 2 to 3 teaspoons harissa and a pinch of salt.
