If you’re still on board the avocado train (as in, the inundation of avocado toast on your Instagram feed hasn’t totally worn you out), read on. There’s a new restaurant opening in Amsterdam at the end of February, and the menu will focus entirely on the beloved green fruit. That’s right: The Avocado Show, Amsterdam’s first avocado bar, will serve avocado-centric dishes for breakfast, brunch, lunch, and dinner, as well as late-night snacks. Diners will have the option of eating in-house, ordering take-out, or getting the food delivered (hello, breakfast in bed).

The restaurant is the brainchild of friends Julien Zaal, Ron Simpson, and Jaime van Heije, who are working with Colette Dike from the popular food blog and Instagram account Fooddeco to promote the bar. As for the menu, Simpson said diners can expect Avocado Bun Burgers (which we've bravely attempted), Avocado and Burrata Poached Egg Extravaganza, and Chicken Thighs and TruffelmayOMG They Added Avocado (say that 5 times fast). Simpson predicts it will be hard for diners to select a favorite. “I honestly don’t think people will be able to choose,” he told RealSimple.com. “But the burger will be popular, and so will the fantasy mashed avo on toast!”

Hoping to get your avocado fix stateside? Avocaderìa, a NY-based avocado bar, plans to open in Industry City in February as well. As for Avocado Show expansion, it’s not off the table. “Let’s see how this one goes, but I do think we will eventually go to different cities, too!” Simpson said.
