I have a secret to tell you. You may or may not already know that eggplant is a nutrition-packed vegetable, versatile enough to be the star of the show in Asian stir fries, Italian parmesans, and dips like baba ganoush, but did you know that you can use arguably the simplest cooking method, roasting, to completely transform the humble eggplant?

Roasted eggplant takes on a melty, creamy quality that is somehow both crisp and tender at the same time. If you are using eggplants that have been sitting around for a while or are on the larger side, toss the eggplant slices generously in salt, let them sit, for an hour, then rinse under cool water right before cooking. This will draw out any bitter liquids and ensure that your roasted eggplant is as luscious as it deserves to be in all these roasted eggplant recipes.
