With Christmas just a little more than one month away, it’s time to start thinking about this year’s cookie lineup. For a double dose of mint flavor (a classic during the holidays), each cookie is filled with pieces of Andes mints, then topped with more mints while still warm from the oven. The technique is pretty genius: After the Andes mints melt on the freshly-baked cookies, you’ll spread the melted chocolate all over the top of the cookies to create a shiny, swirled finish.
