While I love the change of seasons, it’s always sad to see summer go. Now’s the time to take advantage of these last few months by spending as much time outside, getting together with friends, and indulging in delicious seasonal produce.

My husband and I usually head to the farmers’ market on Saturdays for our weekly grocery haul. We love to support our local farmers while also picking out the freshest fruits and vegetables available. Over the last few months, we’ve enjoyed an abundance of sweet corn, juicy peaches, tart cherries, and a variety of squash. But now that it’s August, it’s all about the tomatoes.

There are so many different types of tomatoes and endless ways to use them in your favorite recipes. That’s why we’ve put together a list of our favorite kinds of tomatoes and how to make the most of them while they’re perfectly ripe.

Heirloom Tomatoes

Ever notice those oddly-shaped, giant tomatoes in the grocery store? They’re usually red, yellow, green, or deep purple, and are packed with flavor. Heirloom tomatoes tend to be on the pricier side but they can elevate even the simplest of dishes. Slice one up and enjoy it with just a sprinkle of salt, make a homemade gazpacho or add them to a refreshing summer salad.

Cherry or Grape Tomatoes

When ripe, small tomatoes are sweet and mildly crunchy which makes them perfect for snacking with dips like ranch, hummus, and baba ghanoush. They’re also perfect to cook up in a pasta sauce or sauté in a side dish. Here’s a helpful trick: If your cherry or grape tomatoes are about to go bad, make a confit to preserve them for a few more weeks. I don’t think there is anything more delicious than a combination of tomatoes, garlic, fresh herbs, and olive oil.

Plum or Roma Tomatoes

You’re probably familiar with plum or Roma tomatoes since they’re used in many popular dishes like pico de gallo and bruschetta. These tomatoes are oval-shaped and aren’t as juicy, which makes them very easy to dice up. They’re also great for making a homemade tomato paste that can be stored in the freezer for up to 3 months.

Beefsteak Tomatoes

Beefsteak tomatoes are the go-to ingredient for sandwiches and burgers, but they’re also delicious enough to enjoy on their own. Try slicing them into thick slices and baking them with olive oil and herbs. You could also stuff them with rice and cheese or roast them until they’re blistered and soft. There’s no wrong way to prepare them!
