Frozen burritos are the perfect example. While they may be a fine option if you're eating on-the-go, heating up a plain burrito can make for a dry and flavorless dinner. Our solution? Transform them into enchiladas, which are more satisfying, more appetizing, and endlessly customizable.
Begin by preheating the oven to 450°F. Microwave the burritos according to the package instructions, removing them about 30 seconds before they're finished. While the burritos are cooking, slice half of an avocado, cut a lime into wedges, and chop up some cilantro and half a jalapeño. Transfer the burritos to a foil-lined baking dish, cover with store-bought enchilada sauce (feel free to use green sauce if you prefer), and pop in the oven for a few minutes until the sauce is warm. Remove from the oven and top with avocado slices, jalapeño, cilantro, and a sprinkling of queso fresco. Serve with lime wedges.
