If you are unable to find whole wheat pastry flour at your grocery store, try substituting 1 cup of all-purpose flour and ½ cup of whole wheat flour instead. Ingredients 1 ½ cups whole wheat pastry flour 2 tablespoons granulated sugar 1 tablespoon chia seeds 1 tablespoon poppy seeds 1 tablespoon flax seeds 2 teaspoons baking powder ½ teaspoon kosher salt 1 ½ cups buttermilk ½ cup unsalted butter, melted and cooled, plus more for serving 1 tablespoon finely grated fresh orange zest 2 teaspoons vanilla extract 1 large egg, lightly beaten Maple syrup, for serving Directions Heat a Belgian waffle iron according to the manufacturer’s instructions. In a large bowl, whisk together the flour, sugar, chia seeds, poppy seeds, flax seeds, baking powder, and salt. In a separate medium bowl, whisk together the buttermilk, melted butter, orange zest, vanilla and egg. Add the wet mixture to the dry mixture and stir until just combined. Scoop ¼ of the mixture into the waffle iron and spread it towards the edges. Cook the waffle until golden brown and crisp. Repeat with remaining batter.
