Whole wheat pastry flour is a health-minded cook’s secret weapon. We added chia seeds to these waffles for an extra nutritional boost.

These waffles are delicious and healthy. If you are unable to find whole wheat pastry flour at your grocery store, try substituting 1 cup of all-purpose flour and ½ cup of whole wheat flour instead.

Ingredients

  • 1 ½ cups whole wheat pastry flour

  • 2 tablespoons granulated sugar

  • 1 tablespoon chia seeds

  • 1 tablespoon poppy seeds

  • 1 tablespoon flax seeds

  • 2 teaspoons baking powder

  • ½ teaspoon kosher salt

  • 1 ½ cups buttermilk

  • ½ cup unsalted butter, melted and cooled, plus more for serving

  • 1 tablespoon finely grated fresh orange zest

  • 2 teaspoons vanilla extract

  • 1 large egg, lightly beaten

  • Maple syrup, for serving

Directions

  1. Heat a Belgian waffle iron according to the manufacturer’s instructions. In a large bowl, whisk together the flour, sugar, chia seeds, poppy seeds, flax seeds, baking powder, and salt. In a separate medium bowl, whisk together the buttermilk, melted butter, orange zest, vanilla and egg. Add the wet mixture to the dry mixture and stir until just combined.

  2. Scoop ¼ of the mixture into the waffle iron and spread it towards the edges. Cook the waffle until golden brown and crisp. Repeat with remaining batter. Serve the waffles immediately with butter and maple syrup.
