Not great. I'd prefer to make a vegetarian taco with beans rather than tofu. Thought I'd try it though. Won't make again.

Read MoreThese are SO good - easy, flavorful, inexpensive, and healthy! I used feta rather than goat cheese (only b/c it was lots cheaper at my store - I'm sure goat cheese would be great too), and based on other reviews, marinated the tofu briefly with chili powder, salt, paper (as stated in recipe), and added cumin, garlic powder, minced onions, and a dash of cayenne to the mix. Delicious and makes a ton of food!
Read MoreExcellent recipe however made many enhancements. First crumpled tofu and season with chili powder, cumin, onion powder, and garlic power letting sit in the refrigerator for the day. Second used a roasted corn. Third chopped up the spinach with a cilantro and squeezed in lime juice. Forth used corn tortilla instead of flour (no gluten). Fifth used Queso Fresco (Mexican crumple cheese). Finally followed recipe as written above. Served with El Pato sauce (found at major grocery), lime, and pico.
Read MoreI thought these would be good based on other reviews but they are TERRIBLE. Using chili powder, salt, and pepper to coat the tofu does not provide enough flavor to carry the dish. The goat cheese was a poor addition, they were better (but still not something I'd make again) with a Mexican cheese blend. I cook with tofu frequently, so it's not like that's the problem. These are just bland and gross!
Read MoreForgot to say that I, too, sauteed the tofu for longer than 4-5 min. The chili powder makes it very difficult to tell if it's "golden brown". Although I was hoping for "crunchy", that didn't happen either, but with the addition of all the other ingredients, it didn't matter!

Read MoreOutstanding! I used crunchy taco shells (freshly fried from corn tortillas) in place of the soft flour tortillas in order to give the dish more texture. And next time, I'll cube the tofu instead of crumbling to get a better sear on it (I like mine a little crispy on the outside) and double the amount of baby spinach. But this recipe is a definite keeper - such amazing flavor!

Read MoreFantastic flavors and super easy. Made it for the 2nd time tonight, and my visiting brother, who initially eyed it suspiciously and asked "what's tofu?" loved it! I previously made it with Trader Joes fire roasted corn and, as the prior poster said, it was wonderful. I never occurred to me to blot or press the tofu to rid excess water, and that hasn't been a problem. However, I do cook it longer than the 4-5 minutes stated and perhaps that serves the same purpose. This recipe will become a weeknight staple in our house.

Read MoreVery good and very simple! The goat cheese definately made it. I put the goat cheese on over the hot spinach tofu mixture and it melted the perfect amount and then put homemade salsa with lots of cilantro on top...it was delicious...and my 1 and 4 year old loved it too! Also make sure you blot the tofu dry with a lot of paper towels...wet tofu can ruin a good recipe!
