We love the addition of coconut milk yogurt so much, in fact, that we want to add it to all our quick breads—vegan or not. To take it up a notch and turn this recipe into vegan banana nut bread, we stirred in ½ cup chopped walnuts. To make gluten free vegan banana bread, use a gluten-free flour blend in place of the all-purpose flour.
Though undoubtedly delicious, you may be wondering, is vegan banana bread healthy? Because this vegan banana bread recipe calls for canola oil in place of butter, it’s lower in saturated fat. However, both the coconut milk yogurt and soy milk contain sugar, so the bread should still be eaten in moderation.
Nonstick cooking spray
4 medium-size very ripe bananas, mashed (2 cups)
1 cup vanilla coconut milk yogurt alternative (such as So Delicious Dairy Free)
½ cup vanilla soy milk
¼ cup canola oil
1 teaspoon pure vanilla extract
4 cups all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon ground cinnamon
½ teaspoons kosher salt
½ cup chopped walnuts
How to Make It
Preheat oven to 350°F. Coat 2 (9- x 5-inch) loaf pans with cooking spray.
Combine bananas, yogurt, soy milk, oil, and vanilla in a food processor and process until smooth, about 1 minute.
Whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt in a large bowl. Add banana mixture to flour mixture; stir well to thoroughly combine. Stir in walnuts. Pour batter evenly into prepared loaf pans.
Bake on middle rack until a wooden pick inserted in center of loaves comes out clean, 40 to 45 minutes. Remove from oven and cool in pans 10 minutes. Remove from pans and cool 10 minutes before slicing.
