Soy-Glazed Salmon Sandwiches With Watercress

A fillet of salmon is too often relegated to the spot of a weekly “healthy” dinner, served alongside plain vegetables. No longer! You’ll glaze the salmon with a spicy soy mixture, and top the fillets with a pile of peppery radish watercress salad, all sandwiched between pillowy brioche. Splurge on the nicest buns you can find—they’re worth it to make this dinner as delicious as possible. If you want to serve with a side dish, a cucumber-avocado salad would be nice, or even potato chips, because why not.Headnote by Lindsay Maitland Hunt
