A fillet of salmon is too often relegated to the spot of a weekly “healthy” dinner, served alongside plain vegetables. No longer! You’ll glaze the salmon with a spicy soy mixture, and top the fillets with a pile of peppery radish watercress salad, all sandwiched between pillowy brioche. Splurge on the nicest buns you can find—they’re worth it to make this dinner as delicious as possible. If you want to serve with a side dish, a cucumber-avocado salad would be nice, or even potato chips, because why not.

How to Make It

Step 1

Mix chili sauce, soy sauce, and vinegar in a bowl.

Step 2

Heat 1 tablespoon oil in a heavy pan over medium-high. Season salmon with salt and pepper. Cook until browned on 1 side, about 3 minutes. Flip and cook, brushing with soy mixture often, until just cooked through, about 3 minutes.

Step 3

Toss watercress, radishes, lemon juice, and remaining 1 tablespoon oil in a medium bowl.

Step 4

Spread mayonnaise on top and bottom halves of buns. Build sandwiches with salmon and watercress mixture. Serve sandwiches with sweet potato chips.
