- 3/4 cup apple cider vinegar
- 1/3 cup sugar
- 1 tablespoon pickling spice
- kosher salt
- 4 Persian or small cucumbers, quartered lengthwise
- 1/2 small white onion, thinly sliced
- Combine the vinegar, sugar, pickling spice, ¼ cup warm water, and a pinch of salt in a medium bowl. Add the cucumbers and onion and stir to combine.
- Refrigerate until the vegetables are infused with the flavor of the marinade, at least 3 hours and up to 2 days. Serve chilled or at room temperature.
