When it comes to snack food, you'd probably list dozens of options before mentioning chickpeas (or garbanzo beans, same thing), but this recipe will change that. While most snack foods are loaded with empty calories, chickpeas are protein-rich legumes that provide a lot of fiber and beneficial nutrients. What's more, these versatile oven-baked treats make a great crunchy topping for soups, salads, and grain bowls.

To perfect these golden, crispy, salty snacks, make sure to dry the chickpeas thoroughly after draining and rinsing them, patting them with paper towels. (Any residual moisture causes them to steam instead of crisp.) Also, preheat the baking sheet to ensure the chickpeas crisp as soon as they hit the hot pan.

Ingredients

  • 1 15.5-ounce can chickpeas, rinsed, drained, and patted dry 

  • 1 tablespoon olive oil

  • 1 teaspoon smoked paprika

Directions

  1. Preheat baking sheet and oven to 425°F. Toss chickpeas in olive oil and paprika and spread on a rimmed baking sheet.

  2. Roast until crispy, shaking pan halfway through, about 20 minutes.
