Smoked Salmon and Egg Canapes
Sometimes, canapés are too fussy for their own good. Our version is at once elevated and down-to-earth, thanks to thin slices of smoked salmon that sit atop spoonfuls of salty, creamy egg salad. Look for miniature pumpernickel loaves in the grocery store bread aisle. If you’re serving the appetizer right after you prepare it, consider toasting the bread for extra crunch; get ahead for your party by preparing the egg mixture ahead of time. Set it aside in the fridge and create an assembly line to piece the canapés together in minutes. Technically party food, you could also prepare a full-sized version for a simple dinner.
