Heat oven to 375°F. Line two baking sheets with parchment paper.
Grate the cheese with a microplane or using the fine holes on a box grater. Combine the cheese and paprika in a small bowl.
Place the cheese mixture on the prepared baking sheet in tablespoon scoops, spreading them out gently into 1 ½-inch circles.
Bake for 3 to 4 minutes, until golden brown. Let the crisps cool completely on the baking sheets before removing them.
