How to Make It
Step 1
In a medium bowl, combine the beans, oil, salt, and pepper. Roughly mash the mixture with the back of a fork.
Step 2
Place 8 of the bread slices on a work surface. Divide the mashed beans among them. Top with the onion, cucumber, sprouts, and avocado.
Step 3
Stack the open-faced sandwiches on top of one another, avocado-side up, to make 4 double-decker sandwiches. Top with the remaining 4 slices of bread.
Step 4
Slice each sandwich in half, if desired, and serve.

I thought these were vegan recipes. Unless the bread is vegan, this is just vegetarian.

My grandmother used to make a sandwich almost exactly like this, only she lightly toasted the bread (helped with the filling issue lizusa noted) and added sliced mushrooms and black olives. My mom and I both have this for supper a couple of times a month.

This is a very yummy sandwich, and very filling for a vegetarian one! I usually stick to the recipe, but I have yet to find bread big enough to handle all of the filling. So, I stick it in a whole wheat pita or even lavash.

Easy and healthy no-cook meal! It's very filling and can be made with ingredients that will not go to waste. I'm adding this into my weekday lunches rotation.

This is a great recipe! I tweaked it for one person. I mashed up white beans with kidney beans and chickpeas for a richer flavor, I left out the salt, and I added tomato to the toppings. AMAZING sandwich! So healthy and yummy!
