Do you really need the author to tell you to use vegan bread? If you're vegan, that's what you have in your house. Most bread is vegan anyway. If you're going to complain, find something useful to complain about. Otherwise, just use common sense.
I thought these were vegan recipes. Unless the bread is vegan, this is just vegetarian.
My grandmother used to make a sandwich almost exactly like this, only she lightly toasted the bread (helped with the filling issue lizusa noted) and added sliced mushrooms and black olives. My mom and I both have this for supper a couple of times a month.
Easy and healthy no-cook meal! It's very filling and can be made with ingredients that will not go to waste. I'm adding this into my weekday lunches rotation.
This is a great recipe! I tweaked it for one person. I mashed up white beans with kidney beans and chickpeas for a richer flavor, I left out the salt, and I added tomato to the toppings. AMAZING sandwich! So healthy and yummy!
