In a large bowl add the lettuce and season with salt and pepper to taste.
Drizzle over red wine vinegar, and with clean hands, toss until coated.
Drizzle over blue cheese dressing; toss to combine. Taste and season with additional salt and pepper as needed.
Transfer salad to bowls. Top with sliced cucumber and carrots. Sprinkle over Parmesan cheese. Serve immediately.
