We loved this recipe. Instead of rice, I serve with bowtie pasta. Parmesan sprinkle on top. Weeknight dinner or sit down dinner or party. Just love it.
I rated this recipe with 5 stars because it is so fantastic! I didn't have any shrimp so I added a fresh fennel bulb which I sliced along with 1 onion and sauteed both with the pound of ground Italian sausage that I had on hand. I didn't have a 28 oz. can of diced tomatoes so I added 2 - 10 oz. cans of Ro*tel diced tomatoes with green chiles that I had on hand. Hubby and I enjoyed this recipe so much! I want to thank the person who shared it with me and we will have this dinner more often from now on. It is to die for!
What a lovely recipe! I used regular diced tomatoes and seasoned pepper and added a dash of Emeril's Essence at the end. Yum!!

This is a wonderful recipe! Perfect for preparing after a work-day because it's fast and easy, covers some major food groups (!), and looks and tastes great (it's borderline comfort food). I have a rice steamer so started the rice first and by the time it was cooked, the rest of the meal was ready to serve.
