How to Make It

Step 1

Stir together corn, poblano, radishes, and lime juice. Set aside.

Step 2

Cook ground round in a large nonstick skillet over medium-high, stirring occasionally, until browned, about 5 minutes. Stir in shiitakes, garlic, and salt; cook, stirring occasionally, until shiitakes are tender, about 5 minutes.

Step 3

Divide ground round mixture evenly among tortillas; top with corn mixture, cilantro, and hot sauce.
