Step 1

Cut off the skin and white pith from 1 lime. Remove the lime segments and roughly chop. Toss with the shallot, 1 tablespoon lime juice (from another lime), olive oil, rice vinegar, soy sauce, and sugar. Serve with 12 oysters on the half shell, on ice.
