Sure, this plate includes creamy hummus, fluffy warm pita, and fresh herbs. But the real star of the show is the crispy sautéed hard-boiled eggs. Eggs are a mini-miracle food packed with vitamin D, protein, and antioxidants. Here, we're giving the amazing egg a major upgrade. Simply heat oil in a skillet, season hard-boiled eggs lightly, and give them a nice sear. The result is golden and crispy on the outside, yet creamy on the inside, in five minutes flat. Ingredients 1 hard-boiled egg, peeled and halved lengthwise ⅛ teaspoon kosher salt ⅛ teaspoon freshly ground black pepper 2 teaspoons olive oil 2 tablespoons hummus Pita wedges, for serving Fresh flat-leaf parsley leaves and harissa, for serving (optional) Directions Sprinkle both sides of egg halves evenly with salt and pepper.
