Start your day strong with a breakfast built to sustain you all morning. Sure, this plate includes creamy hummus, fluffy warm pita, and fresh herbs. But the real star of the show is the crispy sautéed hard-boiled eggs. Eggs are a mini-miracle food packed with vitamin D, protein, and antioxidants. Here, we're giving the amazing egg a major upgrade. Simply heat oil in a skillet, season hard-boiled eggs lightly, and give them a nice sear. The result is golden and crispy on the outside, yet creamy on the inside, in five minutes flat.


  • 1 hard-boiled egg, peeled and halved lengthwise

  • teaspoon kosher salt

  • teaspoon freshly ground black pepper

  • 2 teaspoons olive oil

  • 2 tablespoons hummus

  • Pita wedges, for serving

  • Fresh flat-leaf parsley leaves and harissa, for serving (optional)


  1. Sprinkle both sides of egg halves evenly with salt and pepper. Heat oil in a small nonstick skillet over medium. Add egg halves, cut side down; cook until golden brown, 1 to 2 minutes. Serve with hummus, pita, and, if using, parsley and harissa.
