Simple Salmon Cakes


Serve these with a mix of mayo and ketchup for dipping—or serve on slider buns or over salad greens. Don’t worry about any skin or bones in the salmon; they’re soft enough to eat and will be virtually undetectable in the cooked patties.

  • 1 7.5 oz.-can salmon

  • ¼ cup panko or other breadcrumbs

  • 2 tablespoons mayonnaise

  • 1 teaspoon Dijon mustard (optional)

  • ¼ teaspoon kosher salt

  • Freshly ground pepper to taste

  • 1 tablespoon olive oil


  1. Drain the salmon and place in a medium bowl. Add the panko, mayonnaise, mustard (if using), salt, and pepper. Mix with a fork until combined. Form into four patties.

  2. Heat the olive oil in a medium nonstick or cast-iron pan over medium heat. Add the patties, and cook until golden brown, about 2-3 minutes per side.
