Ingredients

  • ¼ cup chopped roasted red peppers

  • ¼ cup toasted walnuts, chopped

  • 2 scallions, chopped

  • 1 tablespoon olive oil

  • kosher salt and black pepper

  • 12 thick-cut potato chips

Directions

  1. In a small bowl, combine the roasted red peppers, walnuts, scallions, oil, ¼ teaspoon kosher salt, and ⅛ teaspoon black pepper.

  2. Spoon onto the potato chips.
