In this baked pineapple recipe, roasting the fruit in a hot oven concentrates its sweetness. Sugar and cinnamon up the ante, of course. Remember that brown sugar is preferable to white because it caramelizes into a deeper, richer flavor.

Don't want to heat up the entire house on a hot summer day? Coat the pineapple wedges in the sugar and cinnamon mixture and toss them on a grill. Or, cook the pineapple pieces in an air fryer at 380 F for 12 to 15 minutes. Serve with ice cream or over pound cake.

Ingredients

  • 1 pineapple, cut into 1-inch pieces

  • 2 tablespoons light brown sugar

  • 1 tablespoon canola oil

  • ½ teaspoon ground cinnamon

Directions

  1. Heat oven to 450° F.

  2. Toss together the pineapple, sugar, oil, and cinnamon on a rimmed baking sheet.

  3. Roast until golden, 15 to 20 minutes.

  4. Serve warm or at room temperature over rice pudding, ice cream, or pound cake, topped with a dollop of whipped cream.
