Ingredients

  • 1 pound mixed mushrooms (such as oyster, cremini, and shiitake), roughly chopped

  • 1 pound button mushrooms, halved or quartered if large

  • ½ cup olive oil

  • 6 fresh thyme sprigs, plus more for garnish (optional)

  • kosher salt and black pepper

Directions

  1. Heat oven to 450° F. Toss the mushrooms, oil, thyme, 1½ teaspoons salt, and 1 teaspoon pepper on 2 rimmed baking sheets.

  2. Roast, tossing once, until golden brown and crispy, 30 to 35 minutes. Garnish with fresh thyme, if desired. Serve warm.
