Popcorn Bars

This decadent dessert recipe reads like an all-star roster of delicious ingredients—butter, marshmallows, popcorn, pretzels, and peanuts all join together to make addictively crunchy, chewy squares. They’re crowd-pleasing, easy to put together and use regular ingredients that you can find at any grocery store. The combination is flexible, too. Try folding in some potato chips in place of half the pretzels or substitute half a cup of chocolate chips for half the peanuts. The point is, no matter what you do, you’ll end up with a ridiculously tasty treat.

Ingredients

  • 5 tablespoons unsalted butter

  • 1 (10-oz.) pkg. miniature marshmallows, divided

  • 9 cups popped, salted popcorn (from 1 [3.29-oz.] microwavable bag)

  • 1 cup miniature pretzel twists

  • 1 cup roasted, salted peanuts, coarsely chopped, divided

  • Cooking spray

Directions

  1. Melt butter in a large saucepan over medium. Remove and reserve 1 cup of marshmallows; add the remaining marshmallows to the saucepan. Cook, stirring often until just melted. Remove from heat and fold in popcorn, pretzels, ¾ cup chopped peanuts, and the remaining 1 cup marshmallows.

  2. Coat a 13- by- 9-inch baking dish with cooking spray. Press mixture into prepared pan and sprinkle with remaining ¼ cup peanuts. Let set until firm, about 30 minutes. Cut into 3- x 3¼-inch bars and serve.
