This pimiento cheese is not for the faint of heart. Aggressively cheesy with bold flavors, it’s an iconic Southern dish that should be present on any game-day spread. The mix of colby cheese, bell peppers, and creamy mayonnaise is too delicious to pass up. The hot sauce livens up the appetizer, but it's still fairly mild in spiciness. So if you’re looking for some heat, go ahead and add a few more dashes. If you want to go the more traditional route, swap in pimentos for the red bell peppers. For the best results, shred your own cheese. The spread also plays nice in sandwiches and, of course, in a grilled cheese.
1 pound colby cheese, shredded (about 4 cups)
1 12-oz. jar whole roasted red bell peppers, drained and finely chopped
½ cup mayonnaise
1½ teaspoons black pepper
1½ teaspoons hot sauce
½ teaspoon kosher salt
Crackers or crudités, for serving
How to Make It
Stir together cheese, bell peppers, mayonnaise, black pepper, hot sauce, and salt in a large bowl until well combined. Serve with crackers or crudités.
