And, hey, finishing them off with butter and sharp Cheddar doesn’t hurt. Stock your baked potato bar with classic toppings like classic sour cream, chives, and bacon, and some healthy steamed broccoli thrown in for good measure. To keep the fully baked potatoes warm before serving, wrap them in foil and keep in a 200º F oven for up to 1 hour.

  • Preheat oven to 350°F and set a rack inside a rimmed baking sheet. Working over rack, rub potatoes with oil and prick several times with the tip of a sharp knife. Season with salt and several grinds of pepper and place on rack. Bake until tender when pierced with a knife, about 1 hour. Let cool slightly.

  • Split potatoes and gently fluff insides with a fork. Divide butter and Cheddar among potatoes and return to oven. Bake until cheese is melted, about 5 minutes.

  • Serve potatoes with fixings on the side.
