How to Make It

Step 1

Preheat the oven to 375° F. Line a rimmed baking sheet with parchment paper. In a large mixing bowl, combine the cauliflower rice, egg, onion, breadcrumbs, Parmesan, mozzarella, chives, and garlic powder. Season with a generous pinch of salt and several turns of freshly ground pepper, and stir until well mixed.

Step 2

Form the mixture into 36 tots and place on the prepared baking sheet, spacing them evenly. Sprinkle each tot with additional Parmesan cheese. Bake the tots until golden brown, about 18-20 minutes, flipping them halfway through cooking time.
