Mint and Scallion Relish


Spread this minty relish on flatbreads or crackers, or serve it alongside grilled salmon or chicken.

  • ½ cup olive oil

  • ¼ cup fresh lemon juice

  • 2 teaspoons honey

  • 1 small clove garlic, finely chopped

  • kosher salt and black pepper

  • 1 cup chopped fresh mint

  • 4 scallions, chopped


  1. In a small bowl, whisk together the oil, lemon juice, honey, garlic, ½ teaspoon salt, and ¼ teaspoon pepper.

  2. Stir in the mint and scallions.
