- 10 ounces button mushrooms, trimmed and sliced (about 2 1⁄2 cups)
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 2 tablespoon chopped chives
- kosher salt and black pepper
- Combine the mushrooms, oil, lemon juice, chives, ½ teaspoon salt, and ¼ teaspoon pepper in a medium bowl. Marinate for at least 4 hours and up to 2 days.
