Lime and Chia Vinaigrette
Here’s a bright, refreshing take on a classic vinaigrette. Lime stands in for vinegar, adding zesty brightness, and honey mellows the intensity of Dijon. It’s a savory-sweet symphony of flavors, perfect for a plain salad of greens (well, not so plain once this dressing arrives) or a platter of avocado and grapefruit nestled into leaves of Bibb lettuce. It would even be at home as a dipping sauce for chicken skewers.
