Here’s a bright, refreshing take on a classic vinaigrette. Lime stands in for vinegar, adding zesty brightness, and honey mellows the intensity of Dijon. It’s a savory-sweet symphony of flavors, perfect for a plain salad of greens (well, not so plain once this dressing arrives) or a platter of avocado and grapefruit nestled into leaves of Bibb lettuce. It would even be at home as a dipping sauce for chicken skewers. For the oil-conscious, the chia seeds add an extra bonus: since they become viscous after soaking in the liquid, there are only two tablespoons of olive oil in a batch.

How to Make It

Step 1

Whisk together lime juice, oil, 2 tablespoons water, chia seeds, mustard, honey, salt, and pepper in a medium bowl. Let stand until slightly thickened, 15 minutes. Use to dress 6 cups of greens. Store in an airtight container in the refrigerator up to 1 week.
