I made this dish last night (with a few minor changes) and served it over buttered Israeli couscous, also with lemon zest. I added a little bit of garlic to the mix and probably used a whole cup of wine (a Texas Chenin Blanc). I chose to pour some of the wine in the pan to break down what was left rather than wiping it out, and THEN I added the olives, lemon juice, etc. It was delicious. Green olives pair well with chicken. I don't think my husband and I would have enjoyed this dish as much if we had it with egg noodles. Egg noodles are great with many dishes but I highly recommend couscous or orzo with this particular recipe.

Read MoreThis was very tasty and quick. My 8 yr old and 21 month old enjoyed it. My only concern is the nutritional information for this dish. The information I am looking at says that a serving only has 6 grams of protein. I don't think it's correct given that 4 ounces of skinless chicken breast is about 30 grams of protein. So, if you are avoiding this dish because of the nutritional information....don't...I think it is wrong.
