- 2 cups thinly sliced Persian cucumber (about 4 cucumbers)
- 1 teaspoon kosher salt
- 3 scallions, sliced
- 2 teaspoons rice vinegar
- 1 teaspoon granulated sugar
- 1 teaspoon soy sauce
- ½ teaspoon black sesame seeds
- Toss together cucumber slices and salt in a small bowl; let stand 5 minutes. Drain and rinse.
- Toss together cucumbers, scallions, vinegar, sugar, soy sauce, and sesame seeds in a medium bowl. Serve with fried chicken.
