- 4 slices multigrain bread
- ½ cup hummus
- 1 small cucumber, thinly sliced
- ½ cup crumbled feta cheese
- ½ small red onion, sliced
- 6 sprigs mint, torn
- Spread 2 slices of bread with hummus. Layer on the cucumber, feta, onions, and mint. Top with remaining bread.
- Wrap sandwiches tightly with plastic film or wax paper if you are packing them, or serve immediately.
