The best guacamole recipes are about two key elements: ripe avocados (duh) and perhaps even more importantly, the ratio of ingredients. An out of proportion guac is simply a waste of avocado, and thus, the reason to follow these simple steps for doing it right. Here, it’s all about a shower of chopped cilantro, just the right amount of acid from a lime, and some heat from a jalapeño. Then, the most important ingredient that ties it together: salt, which highlights the rich avocado, the sharpness of the lime, the herbaceous cilantro and the fiery jalapeño. Only one task is left to you: selecting the perfect chip.

Ingredients

  • 4 ripe avocados, halved and pitted

  • ¼ cup chopped fresh cilantro

  • 2 tablespoons fresh lime juice (from 1 lime)

  • 1 jalapeño, finely chopped, seeded for less heat

  • 1 ¾ teaspoons kosher salt

  • Tortilla chips, for serving

Directions

  1. Scoop avocado flesh into a bowl. Add cilantro, lime juice, jalapeño, and salt. Mash with a fork or potato masher to desired consistency. Serve with chips.
