This easy green goddess dressing recipe is a versatile all-star, perfect for fresh vegetables, hard-cooked eggs, poached shrimp, or cold chicken. (Seriously, try it with chicken.) A classic green goddess dressing can tend toward the runny side, so frozen peas in this rendition are a welcome addition to the standard. This is because peas’ starchy texture adds body, as well as a touch of sweetness. The anchovy fillet is optional, add it for extra umami flavor—the result is deliciously Caesar-esque. A bottle in your fridge won’t last long, so consider adding it to your weekly meal planning rotation.

Ingredients

  • ½ cup whole buttermilk

  • ½ cup mayonnaise

  • ½ cup frozen sweet peas, thawed

  • ½ cup packed fresh flat-leaf parsley leaves

  • 1 tablespoon chopped fresh dill

  • 1 tablespoon fresh lemon juice (from 1 lemon)

  • 1 medium garlic clove, smashed

  • ½ teaspoon kosher salt

  • ¼ teaspoon black pepper

  • 1 anchovy fillet (optional)

  • Serving suggestions: little gem lettuce leaves, sliced avocado, sliced cucumber, torn fresh dill, and croutons

Directions

  1. Process buttermilk, mayonnaise, peas, parsley, dill, lemon juice, garlic, salt, pepper, and, if using, anchovy in a blender until smooth, about 20 seconds. Arrange little gem lettuce leaves, avocado, cucumber, torn dill, and croutons on a platter; drizzle with dressing.
