This easy green goddess dressing recipe is a versatile all-star, perfect for fresh vegetables, hard-cooked eggs, poached shrimp, or cold chicken. (Seriously, try it with chicken.) A classic green goddess dressing can tend toward the runny side, so frozen peas in this rendition are a welcome addition to the standard. This is because peas’ starchy texture adds body, as well as a touch of sweetness. The anchovy fillet is optional, add it for extra umami flavor—the result is deliciously Caesar-esque. A bottle in your fridge won’t last long, so consider adding it to your weekly meal planning rotation.

How to Make It

Step 1

Process buttermilk, mayonnaise, peas, parsley, dill, lemon juice, garlic, salt, pepper, and, if using, anchovy in a blender until smooth, about 20 seconds. Arrange little gem lettuce leaves, avocado, cucumber, torn dill, and croutons on a platter; drizzle with dressing.
