Add a toasty note to this gingery-sweet cocktail with stout or brown ale, courtesy of Tavour. (If you have coffee liqueur, that'll give it an extra punch.)
Crush a ginger cookie on a plate, and mix in a sprinkle of brown sugar (if desired).
Pour honey onto another small plate, and rim your glass by dipping it into the honey, then the ginger cookie/brown sugar mix.
Pour the beer and espresso or coffee into a cocktail shaker or tall stirring glass with a few ice cubes.
Gently stir in the molasses, ginger syrup, brown sugar, and cinnamon.
Strain into the rimmed cocktail glass. Garnish with an additional ginger cookie and coconut shavings, if desired.
