  • Crush a ginger cookie on a plate, and mix in a sprinkle of brown sugar (if desired).

  • Pour honey onto another small plate, and rim your glass by dipping it into the honey, then the ginger cookie/brown sugar mix.

  • Pour the beer and espresso or coffee into a cocktail shaker or tall stirring glass with a few ice cubes.

  • Gently stir in the molasses, ginger syrup, brown sugar, and cinnamon.

  • Strain into the rimmed cocktail glass. Garnish with an additional ginger cookie and coconut shavings, if desired.
