I'd possibly make this as a cold salad as a side dish, but as a meal it didn't cut it for me.
I use cottage cheese or kefir cheese because I don't care for ricotta that much. I love the addition of raisins and the balsamic vinegar. This really makes the dish! Bravo for a great recipe!
I used a little less olive oil, but plenty of the other ingredients, plus a few extra raisins. Delicious warm, it also makes a great cold pasta salad. Would probably work great with artichokes, too.
This is really good! The texture of the chewy raisins with the soft but crunchy pine nuts is such a good combination. This recipe also makes you feel like you've had a hearty meal without leaving you feeling too full.
