I love this appetizer! I have made it several times, I add a bit more of the salt and pepper for flavor. I had tried to mix it up with other seasonings, because it can be a bit bland, but salt and pepper works best. I roast the almonds in my cast iron skillet after rough chopping them to get a nice toasty flavor. I also like to double the batch, make enough for the party and leave the rest unassembled for anytime snacks.
I used almond slices, goat cheese and currants. This is easy and delicious. Nice and light. I filled up the endive boats pretty full. It is for a dinner for 4 Anne I had another RS appetizer but this was the hit. Will definitely make this one again
I made this last night.. I added all the ingredients and substituted chives for scallions since I could not find fresh chives.. I tried to serve it right after I made it but it had very little flavor so I left it for a few hours and it was fantastic.. A HUGE hit light and delicious.. I will absolutely make this again..
This is a great appetizer. I subbed goat cheese for the ricotta (you could call it an addiction), and currants for the raisins (inadequate shopping list). The concept is great, and I will continue to toy with it. Healthy and light, it didn't fill up my dinner guests so they could enjoy the rest of the evening.
