Eggs With Turkey Breakfast Sausage and Fruit

How to Make It
Step 1
Combine the turkey, maple syrup, sage, thyme, ½ teaspoon salt, and ¼ teaspoon pepper and form into eight 2½-inch patties. Heat the oil in a large skillet over medium-high heat. Add the patties and cook, turning once, until cooked through, 2 to 3 minutes per side; transfer to a plate.
Step 2
In a medium bowl, beat the eggs with ¼ teaspoon each salt and pepper. In a second large skillet, melt the butter over medium heat. Add the eggs and cook, stirring, until set but still soft, 2 to 3 minutes. Serve with the patties and fruit.

What a wonderful meal! I made a couple changes because I served it to the kids(4, 4, and 2) for breakfast for dinner night. Along with the real maple syrup, i added the regular "sweet" stuff. It made it the perfect amount of smokey and sweet. I also added a large handful on chopped baby spinach to the eggs (the twins are obsessed with 'Green Eggs and Ham' this week. SCORE!)
