We whipped up our own adorable version of one of our childhood favorites with these caramel apple lollipops. Start with green apple flavored hard candies (we like Jolly Ranchers). Melt them slowly in a medium pot, but watch carefully: you don’t want them to take on any color. Pour the melted candy onto a silicone baking mat, then gently lay a lollipop stick on top. While you may be tempted to work on a baking sheet, just be sure it’s rimless—it’s easier if the sticks can hang over an edge. Melt the caramel candies in the same way and drizzle or dip as you like.
8 ounces (36 pieces, about 1 cup) green apple Jolly Ranchers
4 ounces (20 pieces, scant ½ cup) Werther’s Originals
How to Make It
Have ready a non-stick silicone baking mat or a lightly oiled sheet of parchment paper and 18 lollipop sticks.
Place Jolly Ranchers in a small, heavy bottomed saucepan. Heat over low until candies melt, pulling mixture in from edges and stirring gently with a heat proof silicone spatula, as if you were making an omelette. Transfer to a small heatproof measuring cup with a pour spout as soon as candies have melted uniformly. Do not allow to darken.
Let candy mixture stand 1 minute, then carefully pour small circles about 1 ½ inches in diameter onto silicone baking mat. Immediately press a lollipop stick into each circle. Cool completely.
Place Werther’s Originals in a clean, heavy bottomed saucepan. Set over very low heat and stir gently until candies have melted uniformly, about 6 minutes. Use a long handled metal spoon to drizzle caramel over cooled green apple lollipops, allowing the excess to drip back into the saucepan. Return lollipops to baking mat to cool completely. Wrap lollipops in cellophane candy bags and store in a cool, dry place up to 1 month. (Candies will melt if exposed to high humidity.)
