Nothing says “summer on the coast” like a lobster roll—but our tasty shrimp roll can bring warm-weather fantasies to your dining table year-round. (And, not to mention, for a fraction of the price.) Potato hot dog buns taste fantastic with this filling of shrimp, celery, and arugula, but you can also look for so-called New England-style buns, pictured here, which we lightly toasted with butter on each side (just like you’d make a grilled cheese) before filling them. It’s not an essential step, but it does give you that lobster-shack crispy exterior. A serving of potato chips rounds out the meal.

How to Make It

Step 1

In a medium bowl, whisk together the mayonnaise, lemon juice, curry powder, and ¼ teaspoon each salt and pepper.

Step 2

Add the shrimp, celery, and arugula and toss to combine.

Step 3

Serve on the buns with the potato chips (if desired).
